Almost everyone I know has some sort of dietary restriction, whether by choice or not.  While limiting the foods we eat can be challenging, it can also be exciting, because it forces us to be more creative. To explore.  I became a vegetarian and later a vegan several years ago, because that’s what felt right–and still feels right–for both my body and my soul.

What works for me might not work for you.  And what works for one at one time might not work at all at another; we are constantly changing.  A few years ago, my boyfriend (now husband) stopped eating gluten, as per doctor’s orders.  He also scaled way back on the sugar (although he hasn’t cut it out completely… because, you know, chocolate).  Consequently my eating and cooking have adapted, too.

Still, there remains a constant in my food philosophy, and it’s something that I think we can all agree on: Food should always taste good.  Like really, really, really good.

So go turn on that stove (even if it’s only once a week)!  Check out that farm stand or that funky market across town!  Maybe grow a garden.  Or a single pot of basil on your windowsill.
